Slowly simmered broth made of roasted bones and trimmings from Aru's signature dry-aged ducks.with bamboo shoots, vermicelli noodles, aromatic vegetables and a house-made ginger nuoc cham. Add duck heart skewers if you wish - marinated in a sweet ginger soy and grilled in the hearth.
