Sunda is the restaurant that put modern Australian-Asian dining with native Australian ingredients on the map, when Executive Chef Khanh Nguyen first put his stamp on the dining scene with inspired dishes such as an ‘otak otak’ spanner crab curry parfait topped with finger lime, and a now iconic buttermilk roti with vegemite curry. These, along with the crave-inducing egg noodles with xo sauce and chicken crackling remain on the menu as signatures four years on, additions to the four-course set menu that is now served at the award-winning restaurant.
