Parcs is a small, seasonal-driven wine bar and restaurant, led by a bunch of passionate chefs (Damien Neylon leads the kitchen) producing some fine things. The focus here is on up-cycling of produce and seasonality: that fleeting moment when a certain ingredient reaches its prime; and how an over-abundant surplus of produce can be fermented and transformed in interesting ways into sauces, pickles and powders that accent a dish.
