No ovens. Just fire, smoke, charcoal and a deep, almost obsessive respect for the technique. Chef and owner Nicki Morrison opened Flint on Smith Street in Fitzroy in 2022, and the restaurant has been turning heads ever since, winning the 2023 Time Out Innovation Award. Morrison spent years cheffing across Europe, including stints on luxury yachts, before her fascination with live-fire cooking took root. Every single dish on the menu is cooked over red gum over an open hearth, from the signature Carrot Carrot to fire-kissed lamb and whole trout. A mezzanine private dining room overlooks the kitchen, and the curvaceous handcrafted bar is one of Fitzroy's most distinctive interior details.
