The preparation of the restaurant's in-house ribs is testament to the popularity of the dishes at The Smoke. These morsels are first marinated in a secret family barbecue-rub recipe, after which they are smoked for 12 hours with hickory wood, giving them a distinctive flavour. This extensive groundwork infuses the end product with an unmistakable taste and incredibly tender meat.
Being one of the only restaurants of its kind in this area, and indeed in Brisbane, the crew at The Smoke are truly in their element. Two of the most popular dishes are the Texas beef ribs and the buffalo chicken wings. The moreish finger food is a favourite starter, tossed in The Smoke's classic buffalo wing sauce and served crispy with a blue cheese dressing and celery twigs. While the wings and ribs are what most people come for, Blue Smoke also offers some more diverse dishes. The strawberry and spinach salad comes with crumbled blue cheese, fresh strawberries, fiery pecans and a sweet and spicy dressing.
