PROFILE BY BEST RESTAURANTS

Like salted caramel and the smell of pies in the oven, the change in season never fails to excite us foodies. So you can imagine we were pretty excited when we were invited in to Bitter Suite in New Farm to taste their outstanding new autumn menu.

Owners Braden and Katherine Saunders, led by head chef Andrew Birse, have a passion for using local produce and making meals from scratch.

With a selection of nibbles, small plates and large plates on offer, whether you’re hungry or peckish, the new menu has a dish for you.

Some of the standout small plates include crumbed black pudding with poached egg, apple puree and mustard cabbage. The roasted Kent pumpkin dish is served with farro and pickled turnips, and fermented in the leftover whey from the kitchen’s house made ricotta.

The selection of large plates also boasts fresh and sustainable produce. A must-try is the free range, saltbush lamb rump from the Murray Basin, slow cooked and served with a red pepper puree, eggplant and walnut. Saltbush, a succulent which grows around the Murray River, provides an intense flavour to the lamb.

Birse’s exceptional ability to combine flavours and fragrances is best displayed through his ‘Jurassic quail’. After being brined in apple tea, then smoked in-house with a mixture of breakfast and apple tea, the quail is served with heirloom tomato, house made ricotta and crispy pork tail. Sen-sational.

Despite the cooler weather, dessert lovers will melt when they try the coffee brownie, to be indulged alongside the house made stout ice cream and peanut butter ganache.

Bitter Suite has established its reputation as one of Brisbane’s first and finest craft beer bars. With the launch of their new menu, it is clear that diners can expect much more than your average pub meal at this alluring neighbourhood bistro.
