From the boys behind Reuben Hills and Seven Seeds comes Paramount Coffee Project, a warehouse style space on the ground floor of Commonwealth Street's refurbished Paramount building. The vibe and fit out embodies the Surry Hills industrial-chic trademark, with polished concrete, blonde wooden stools and hints of exposed brick. A floor-to-ceiling window lets in plenty of natural light. Coffee is the cafes pride and joy, showcasing beans and blends from a variety of roasters around the world. The drink-in-a-jar trend is used to present cold drip long blacks, no green smoothies in site. Drinks aside, the food menu is equally worth a look.
