This 80-seat Surry Hills restaurant is owned by Chikaranomoto Global Holdings (who also back Ippudo Ramen in Sydney) and has garnered a reputation for its unique charred ramen recipe which involves burning miso. Sydney designer Paul Kelly has created the moody space with an open kitchen and exposed brick and wood. Grab a stool at the bar and watch the chefs create traditional Japanese dishes.
