Looking over the sparkling water at Balmoral is always good for the soul. I have never really enjoyed a meal at The Public as much as I did this last week. The place just twinkles - it looks good and it sounds good - and the food was simply delicious. The grilled scallops with sweet corn air was amazing and garnished with little crisp croutons of chorizo was an almost perfect combination of contrasting texture, colour and flavour. The daily special of grilled Barramundi fillet with perfectly crisp skin and moist tender flesh - with little droplets of citrusy gel and a garnish of pecan nuts and a a sprout puree - great cooking skills. Service has always been terrific - a good blend of experience and youth - friendly courteous and they listen to what you request. A special place with increasingly better food.
