Italian-ish and deliberately hard to define, Miine on Darby Street in Newcastle is the kind of place that makes the classics and then turns them upside down. Owner Thomas Lawson, a familiar face in the Newcastle hospitality scene, created Miine to be an experience-driven space where handmade pasta, wood-fired pizza and inventive cocktails share the stage with low lighting, a DJ-set tempo and graffiti walls that evolve over time. Bar manager Beaux brings a background from Sydney's top bars, and the cocktail program uses kitchen techniques like sous-vide for genuinely one-of-a-kind drinks. Private and full-venue bookings are available for celebrations.
