Customers are waxing lyrical about Pilot, a tiny restaurant just north of Canberra in Ainslie, and there’s no surprise why. Head chef Malcolm Hanslow lists Automata, Oscillate Wildly and Ester on his resume, plus he was shortlisted for the 2018 Josephine Pignolet Young Chef of the Year award and his experience can be seen right through every dish. Pilot does not offer a la carte but a 7 course degustation menu from $130 per person which is worth every cent. (price as at March 2022)0
