Republica's meaning "for the people", is Melbourne's only bar restaurant on the sand. With the courtyard able to hold up to an impressive 900 people on any given day, it is a sure way to spend your summer nights. There is also live musical entertainment every weekend.
Matt started his training at the Commercial Club in Albury. After completing a year of his apprenticeship he moved to Albury's renowned gastro-pub; The Terminus Hotel where he became the Head Chef within two years. Following this, Matt developed his food and wine matching ability in the surrounding wine districts with All Saints Estate, St Leonards and Hume Weir Resort. Matt moved to Melbourne in 2004, where he did a stint at the Stokehouse St Kilda. He opened Republica (formerly Amello) with his wife, her brother and sister-in-law in late 2005. The Modern Australian menu spans from seafood and meat mains to gourmet pizzas and indulgent desserts with a strong Australian and New Zealand wine list to match.
