Late night dining at Melbourne Supper Club
When I first came to Melbourne I was introduced to the Supper Club by the team of chefs at Park Hyatt Melbourne. It was the perfect place for an after work drink and late night bite. To this day I still clearly remember the first time I sat in those comfy chesterfield couches and savoured every bit of my roast beef sandwich. It was to die for! I can still taste that amazing tender beef and delicious horseradish
Favourite international restaurant at Collins Kitchen
This would have to be our own Collins Kitchen here at Grand Hyatt Melbourne. Guests are spoilt for choice as the wonder through our open kitchen sampling an array of international dishes from live cooking stations. Enjoy a taste of Japan with our fresh sashimi, a trip to Italy with a slice of crisp wood oven pizza, a serve of wokfried peppered wagyu an Asian favourite or the flavour of home with a succulent grilled Gippsland steak. I thoroughly enjoy being able to work with my culinary team out in front of our guests and open our kitchen up to showcase the theoretics of cooking
Special occasion at MoVida
I would take them on a tour of Melbourne laneways, dropping into Movida for a drink and a few Spanish tapas before heading to Supernormal to try Andrew McConnell's signature lobster rolls. Saving the best to last I would then head to B&P sweet studio on Chapel Street for a sweet surprise, an indulgent dessert made by owner Darren Purchese to help celebrate their special occasion
Best kept secret at La Luna
I love the fact that Adrian Richardson has a simple philosophy, keeping his dishes simple to highlight the fresh produce. His ability to utilise all cuts of meat including the ones commonly discarded to make delicious dishes and out of that incredibly tiny kitchen is very impressive. On top of this he ages his own meet in a small coolroom out back! Sometimes I don't know how he does it and he is a nice guy to boot
