The Carlton Hotel is a stylish city pub with a penchant for taxidermy; exotic animals, including a giraffe, look over your shoulder in every room. The Bourke Street Mall property has a reasonable drinks menu, including eight beers on tap and some solid wine options. The dining menu caters to the peckish as well as the ravenous, with bar snacks sitting alongside steaks and other Mod Oz dishes. Upstairs, you'll find the Hasti Bala Bar and Palmz rooftop bar.

LOCATION Near the intersection of Bourke and Swanston Streets. PROFILED BY DE GROOTS MEDIA Discretion may form the better part of valour, but this idiom plays no part in the surrounds of the Carlton Hotel. Once you've ascended the nondescript stairs, it's plush, velvety and over the top. Stuffed animals, palm trees, dramatic wallpaper, objets d'art and velvet-covered furniture (including the plants!) form the opulent background to your dining experience. The menu has a sprinkling of reliable pub-type fare but also some more interesting offerings. Start with the lively flavours of the warm goat's cheese, radicchio, tomato and apple salad, or chickpea and capsicum patties with lemon bean salad and harissa yoghurt. Mains feature flavoursome couplings such as the lamb fillets with cracked wheat and eggplant relish and a cranberry and mint salad, grilled rockling with broccolini and avocado, lime and coriander salsa, or try grilled venison with celeriac puree, sauteed spinach and sour cherry glaze. Finish with a refreshing summer pudding or yoghurt pannacotta with rosewater, watermelon and mint. There is a separate dining room but food is available throughout the entire bar area. Check out the Monday specials where everything on the dining room menu is half price, or pop in on Tuesdays to take advantage of $12 schnitzel specials. The bar features plenty of tap and bottled beers, a short but flirty wine list, and they'll even mix up a cocktail or several if you are tempted by their late licence. Angela Costanzo
