Ceiling-high glass windows surround Palate at Saffire Freycinet, exposing uninterrupted views of Tasmania's stunning East Coast. Designed by one of Tasmania's most renowned artichetcts, Robert Morris-Nunn, and his business partner, Peter Walker, Saffire is one of Tasmania's most exclusive luxury boutique resorts. Chef Hugh Whitehouse, of Darley's at Lilianfels, has created an elegant menu that is impressive but not fine dining. Guests can expect top-notch fish and chips on the a la carte menu but for something more special, Whitehouse also offers an extraordinary multi-course degustation.
