Last week I was fortunate enough to attend an intimate candlelit dinner hosted by Urbane Restaurant, held to raise much needed funds for a cause close to my food-loving heart, the Australian Bocuse d’Or team.

Surrounded by blooms from The Butterfly Lounge, a glass of Louis Roederer in hand, I was treated to seven exquisite dishes prepared by two of Australia’s most admired culinary icons: Shannon Kellam, Australia’s 2015 Bocuse d’Or candidate, and Alejandro Cancino, Gourmet Traveller’s ‘Best New Talent’ for 2013.

I can hardly describe the immense awe each dish inspired; the astounding number of elements on the plate, the complex layers of techniques and textures, and above all, the fluid, almost effortless harmony of flavours exhibited in each dish.

It truly was an experience I will never forget.

The evening started with a delicate lemongrass sorbet, layered with watermelon fragments and punctuated with bursts of heat. Following that, a subtle yet punchy dish of smoked cobia, topped with crunchy beads of toasted rye.

And then the night truly began.

As the first dish of the evening was served, a moment of reverential silence descended upon the table. Moments later, the buzz of excited chatter filled the room as each element was discussed with delight.

Perfectly paired with a buttery Chardonnay, the only word to describe Shannon’s first dish of the evening is incredible. Encased in a delicate leaf of consommé, the soft flesh of the brined blue-eye trevalla contrasted magnificently with the crisp apple cucumber and tart radish dials, the crab foam adding further textural intrigue.

The second appetiser of the night showcased the inspiring technical repertoire of Alejandro – I will never look at a beetroot the same. A dark, romantic dish of poached Galston Farm duck breast, circled by beetroot crisps, pickle, jelly and coulis, interspersed with zesty quandong puree and candied peel.

And then came the main event. Fall off your fork tender, slow-cooked Stanbroke Yearling beef fillet rolled with Rougie foie gras and spinach puree (Shannon’s signature technique), with vibrant, flavoursome vegetables and my favourite element: the vibrant green ‘dumpling’ soaked in bone marrow and filled with rich, velvety beef cheek bordelaise. A truly intoxicating dish.

Dessert was an entirely decadent affair, with two (I repeat, two) dishes. The first, prepared by Alejandro, was an uplifting lemon verbena sorbet with poached pink lady apple and pillowy salted marshmallow.

The second, prepared by Shannon, a raspberry dusted sphere of Maleny fromage blanc, a tart, silken compote hidden within. The surrounding jewels: crisp cubes of just poached pear, delicate stewed rhubarb, fresh mint sorbet, granola and a golden disc of tempered chocolate. Absolute bliss.
