PROFILE BY BEST RESTAURANTS

How deliciously appropriate! A whole restaurant dedicated to the magical pairing of wine and cheese. The GPO Cheese and Wine Room is a cosy little underground space which oozes sophistication and encourages a decadent appraisal of what its menu has to offer. The sandstone walls encase a handful of tables in a dining room which embodies a distinctly European essence. A large painting on one wall depicts a woman who, with wine glass in hand, oversees each scrumptious proceeding as sounds of content murmur from diners' cheese-filled mouths.

With an extensive list of wines which have a predominant lean towards Aussie drops, and a list of Australian and imported cheeses that would make any aficionado salivate, the potential combinations are endless. The cheese and wine flights, however, allow you to choose between a red, white or summer flight where three glasses of wine are presented with the best matched wedge. Tasting notes are delivered with the trio of couplings so guests are kept informed with of facts. The Coulommiers with truffle cow cheese from Ile-de-France, for instance, is a heavenly match with an Even Keel 2006 Shiraz/Viognier from the Canberra District NSW. If the rumbles in your belly call for some other tasty morsels, order an antipasto plate with olives, sun-dried tomatoes, proscuitto, mozzarella and bread. All wines and cheeses are available for purchase, so if you find true love in bottle or wedge form you're able to whisk your favourites home.
