Finefish's 50 seats fill most evenings with Sydneysiders in search of the freshest seafood on the plate and quality wine in the glass. From its humble beginnings as a regional seafood wholesaler more than 30 years ago, Martin's Seafoods has grown tenfold, now established as one of Sydney's most reputable seafood suppliers, delivering to the city's top restaurants. Public demand to see these underwater treasures dished up in the one place led to the conception of Finefish, the restaurant. Enter via the ground-level seafood counter and takeaway for a hint of things to come – the day's catches barely stopped flapping, loaded on ice, eye-balling diners as they pass by.

Follow the timber feature that snakes along the roof and up to the first level to discover a light-filled oasis. The long, narrow dining room is flanked by canvas prints and splashes of blue, and leads to a sunny verandah. Casually professional waitstaff deliver plates of artfully presented, sustainable seafood, which change depending on seasonality and availability. Head chef Paul Pereira marries global flavours to quality seafood to create a six-course tasting menu, featuring creative offerings such as the goat's curd cigar with mushrooms, candied olives and spiced macadamias, and the rare Padagonian toothfish, steamed and served with lettuce, salted black bean, soy and ginger. The a la carte menu meanders past freshly shucked oysters, pan-roasted John Dory with beetroot, grapefruit and fennel, and the eternally popular oven-roasted barramundi with Jerusalem artichoke puree and caponata.
