The spacious restaurant is decorated in earthy coloured furnishings from two-toned chocolate brown and cream chairs, paired with chestnut rectangular dining tables. Pin-striped wooden floors on the upper deck contrast well with the carpeted surfaces on the lower levels. Sweeping glass windows offer views of the city skyline and allow natural light to dapple into the main dining room.

Set on the lobby level of the hotel on the western bank of Darling Harbour, Dish commands magnificent views of the city skyline through soaring floor-to-ceiling windows. The towering skyscrapers across Darling Harbour twinkle with lights as you relax with a glass of wine in the bar before moving into the sleek surrounds of the restaurant.
Stone baked sourdough served with full cream butter is an ideal place to start while you peruse the menu, which offers a good range of meat and fish dishes. A main of dry-aged fillet of Angus beef is cooked to perfection, whilst the red snapper with black mussels is a well balanced dish with light acidic notes from the tomato and fennel broth. The predominantly Australian wine list offers the majority of drops by the glass, and is incredibly good value by the bottle. A Balgownie Estate Pinot Noir from the Yarra Valley is a perfect accompaniment to the cheeseboard, which may feature a delicate Jindi triple cream or a Spanish Mahon.
