Housed in Paramount House Hotel on Commonwealth in Surry Hills, Poly is from the celebrated team behind Ester. Unlike its older sister, here the wine list takes centre stage and the food plays supporting roles – with drinking grub like onion rings, kangaroo jerky and salt and pepper calamari. Admittedly, the drinking ‘grub’ is exceptional and a far cry from any selection of bar snacks you’d find anywhere else. The wine list features 160 drops with a concise cocktail list.

Lunch Saturday from 12pm and dinner Tuesday to Saturday from 5pm
