Jake Nicolson is executive chef across the Ghanem Group of properties. There are 5 properties in the Ghanem Group portfolio; Jake is currently concentrating on their newly opened and really quite fabulous Black Bird Bar and Grill in Brisbane.

Jake is renowned for his innovative dishes featuring hard-to-find high quality produce, beautiful rare breeds and organic heirloom herbs and vegetables. Produce inspires his incredible menus and he is particularly passionate about whole beast cookery. Jake endeavours to get the most out of his ingredients, always researching produce, understanding the importance of seasonality and sustainability and keeping up with the ever-changing food trends.

Prior to joining the Ghanhem Group Jake was at Circa The Prince in Melbourne for 7 years where he was recognised with two Chef Hats from The Age Good Food Guide 2012. Jake's impressive experience also includes a stint at the famous El Builli in Spain and previous to that in London at both The Square and The Ledbury. He was awarded 3rd prize in the prestigious international San Pellegrino Cooking Cup, held in Venice, Appetite for Excellence Young Chef of the Year award in 2008 and winner of the Borges/Ferran Adria culinary Scholarship in 2004. He was also selected to represent Australia at the International Food & Wine Festival in Dubai in 2005. Jake has cooked for everyone from Madonna to Robbie Williams, Katy Perry to Bono.

A laid back friendly kind of a guy, Jake's says the two greatest things about his job are working with his awesome team and mentoring young and upcoming chefs.
