Having spent 18 months as head chef of Claude Bosi's two Michelin starred restaurant Hibiscus, Frenchman Guillaume Zika has moved from London to Sydney to play international guest chef at Balmoral's Public Dining Room. The stint will last until December, during which time Zika will host 5-course degustation dinners every Friday night. Zika's father was a chef, and he was raised on traditional, provincial cuisine. He is classically French trained, though strives to innovate with fresh, local produce. Australian seafood is something he has enjoyed learning about. Having spent time in the kitchens of three Michelin starred restaurants Per Se in New York and Le Grand Vefour in Paris, it will be interesting to see what Zika brings to Balmoral.
