Brad Jolly's Profile

Brad Jolly is regarded as one of Australia’s leading chef’s. He was Internationally recognized before he was 19, and has won many national international and prestigious awards. He is a culinary perfectionist, and has worked alongside Jamie Oliver, Marco Pierre White and Eric Chavot.

Brad has enjoyed a wealth of experience in some of the finest restaurants in the world. After his work at the Hyatt Regency in Sanctuary Cove, he moved to Canada to work at the ‘King Edward’, part of the five-star ‘Leading Hotels of the World’. He worked under Chef John Higgins, who was personal chef to the Queen Mother and Brad cooked for many high profile patrons including the Queen. Whilst in the UK, Brad worked with Eric Chavot at ‘The Capital’ and ‘ Chavot’. The French-inspired dishes received widespread acclaim from discriminative diners and critics and alike.

In London, Brad worked with Marco Pierre White who was the first Englishman and youngest chef ever to be awarded three Michelin Stars. Brad cooked in Marco’s fine dining restaurants, the ‘Criterion’ and ‘Canteen’. The menus were French with Mediterranean influences allowing diners to enjoy exceptional and creative food in captivating surroundings.

Brad and his wife, Angelica, desired to make the most of Australia's produce and returned to Australia to open their first restaurant in Brisbane, Lat 27. Lat 27, won awards and became one of Brisbane’s most loved restaurants. For three consecutive years Lat 27 was one of six Queensland venues to feature in Sydney’s ‘The Good Food Guide’ and ‘The Melbourne Age Food Guide’.

Brad and Angelica opened ‘Alchemy Restaurant and Bar’ in 2005, which is a spectacular restaurant experience like no other. Overlooking the Brisbane River, the stunning venue has a ‘holistic’ approach to fine dining with exquisite architecture, contemporary décor, and a creative menu and wine list with first class service and magnificent views. Brad’s obvious emphasis on fresh, local and seasonal produce prepared using his unique techniques have made Alchemy the fine restaurant that it is today.

Brad Jolly interprets Australian Cuisine in a ‘European’ way, applying a superb sense of style and craftsmanship to food. With a string of accolades to his name and a wealth of experience, this innovative young chef’s passion for cuisine is eclectic, skilled and unpretentious.
