Ashley Hughes joins the team at 360 Bar and Dining as Head Chef. Ashley Hughes, former owner of Alio in Surry Hills, has joined 360 Bar and Dining. Launching a new menu, Ashley has taken up the position of Head Chef within Sydney Tower Dining's preeminent restaurant space (located within the Westfield Tower). With a career spanning over 20 years including working under the likes of Marco Pierre White at L'Escargot and alongside Jamie Oliver at The River Café (London), Ashley brings a wealth of knowledge and experience to an already strong team.

Applying his food philosophy of a simplistic approach to cooking, the new menu at 360 Bar and Dining will include the best seasonal ingredients and produce available. Also receiving a makeover is the beverage offerings with 360 Bar and Dining recently adding Exemplar Heathcote Shiraz to their wine menu. Currently poured by a number of Melbourne venues such as Nobu, 360 is the only Sydney venue stocking Exemplar. With soft chocolate, dark cherry and rustic oak characteristics, the Shiraz is a perfect addition to the menu coming into the cooler months. Guests are able to enjoy Ashley's new menu for lunch or dinner at 360 Bar and Dining which is located at Sydney Tower.
