DETAILSMs Trinh Diem Vy, owner of three restaurants; Cargo Club, Morning Glory and Mermaid as well as the Morning Glory Cooking School is an internationally famous Chef. Her restaurant was the first to cater to foreigners visiting Hoi An, creating menus of family recipes, street foods and local specialties so that visitors could experience Vietnamese cuisine in comfort. She was also the first Vietnamese chef to start a cooking school in Hoi An, as well as an international standard bakery and patisserie.
CLASSESClasses run for four hours at a cost of USD $25 beginning with an extensive tour of the local market. Using the fresh produce bought at the market, students go back to the cooking studio to learn specialist techniques and cooking methods from Ms Vy herself and her helpful staff, along with some interesting insight into Vietnamese food culture. Students eat the meals they create throughout the class and leave with recipes and a gift.
Daily Vietnamese FoodA 45-60 minute class ideal for tourists interested in learning the basics of Vietnamese cuisine. Traditional Vietnamese dishes such as fried spring rolls and dip are taught hands-on and two other dishes are made by chefs and observed by the class.
Daily Vietnamese FoodThis 3-4 hour session includes a guided bicycle tour to the herb gardens of Tra Que Village and talk on traditional Vietnamese gastronomy. The practical side focuses on the preparation on infusion of fresh produce into traditional dishes as well as knife techniques and creation of garnishes.
Cooking for Beginners to Intermediate Levels This three hour session is a rich and comprehensive gourmet experience. Beginning with a one hour market tour to learn about Vietnamese ingredients and how to correctly source the best fresh food, the class provides a hands-on education on cooking and cutting techniques. Concluding with the creation of your very own rice paper rolls, mango salad and cabbage soup, amongst other traditional dishes
Culinary Intensive for the Professional by Ms.VTaught by Ms V herself, this 6 hour course covers everything you need to know to become a bona-fide Vietnamese culinary expert. The education ranges from choosing ingredients, techniques, features on Vietnamese food, history of the culture and finally hands-on experience creating a challenging menu of authentic Vietnamese dishes.
Vietnamese Street Food Cooking This one and a half hour class focuses on the Vietnamese treat of street food. You’ll cook your pre-prepared food at the special “street food” counter with a small group of people.
A Taste of Vietnamese CookingThis one and a half hour class focuses on the philosophy behind the Vietnamese family meal. An insightful education into the nutrients of Vietnamese produce, family life, traditional techniques, customs and the women behind the family meal is sure to inspire anyone who attends the class. A quick hands-on meal of soup, a seafood dish and a cooked vegetable dish is also made.
