FOOD AND BEVERAGE The lunch and dinner degustation menus (7 and 13 courses respectively) change daily, and sometimes even these alter table to table depending on the creative energy in the kitchen. Like Barbot’s culinary philosophy at L’Astrance, Kishida’s method of creation draws on three processes. The first is respecting the product, the second is pursuing the best cooking process, and the third is paying attention to detail when seasoning each dish. The result is a magnificent sequence of signature dishes and spontaneous creations – each finessed with Kishida’s final touches of flavour and restrained aesthetic flair.
