DETAILSWaku Ghin’s interior was created by JZA+D and reflects Chef Tetsuya’s dynamic and multi-dimensional approach towards his dishes, along with an overarching sentiment of unity and elegance. The carpet in the main dining room draws inspiration from the undulating forms of folded steel found in one of the chef’s knives. The corridor walls are curving and sinuous, echoing the work of American minimalist sculptor, Richard Serra and its niches hold works of art from the chef’s private collection. Waku Ghin's drawing room is the ideal place to relax with after-dinner drinks, while soaking in the sensational floor-to-ceiling view of the Singapore skyline.
FOOD & BEVERAGEWaku Ghin’s European based yet Japanese influenced menu boasts new creations sourced from seasonal, fresh ingredients throughout the region and beyond. Signature items include Marinated Botan Shrimp with Sea Urchin and Cavia and the Australian Wagyu with Wasabi and Citrus Soy. His famous ocean trout dish is still on the menu as well, although this version of the confit of trout is slow cooked and sits elegantly upon a rough puree of peppery wakame seaweed and wilted witlof with orange zest and wasabi. There is a strong seafood focus with other dishes like Alaskan king crab legs cooked on the teppan grill, Tasmanian abalone with fregola and tomato as well as braised Canadian lobster with tarragon. A box of petit fours presented at the end of the meal (after two delectable dessert dishes) might include the likes of bittersweet chocolate truffles, nutty meringues and sugar coated macaroons – tiny morsels of sweet memories. The10-course degustation menu is available for dinner only in this gastronomic gem of a restaurant which seats up to 25 guests, promising a truly private and exclusive dining experience.
FUNCTIONSThe restaurant’s dining concept is based upon a multi-faceted use of space, where diners can move from room to room, over the duration of the dining experience. The 8,000 square feet restaurant features an intimate lounge at the entrance for pre-dinner drinks. Four unique dining rooms offer private enclosures for small parties to experience the art of skilled chefs preparing food for each group personally. Diners then move on to the main dining room or drawing room to relax over desserts and drinks, while soaking in the sensational floor-to-ceiling view of the Singapore skyline.
