DETAILS Cucina Italiana creates a beautiful gastronomic experience for participants who will not only interact with the food they are cooking, but with the history and décor of the artisan house, and the legacies of the Italian migrants who built it. Students will knead dough’s for pasta, bread, gnocchi or short crust pastry as they learn the secrets of Italian regional cooking.
GENERAL CLASSES Luciana Sampogna has designed inspiring hands-on cooking classes to suit the busiest of schedules. There are daytime, weekend and evening ‘Long Italian Lunch Classes', which are no doubt the house speciality. In these classes participants prepare a full Italian menu celebrating all that is important in Italian food. During these classes, you will also have the opportunity to prepare either fresh pasta or be introduced to bread making, a Tuscan antipasti, meat dish and dessert.
CORPORATE CLASSESLuciana's cooking classes are an innovative way to reward your staff or colleagues and are a great alternative to other team based activities. Cooking often requires an equilibrium between cooks, and as a result it improves relationships between members of your team and is always an unforgettable experience. It's not only a day out from the office but an opportunity to be under pressure in different circumstances and Luciana can design the classes to meet specific requirements. There are hands-on cooking classes or demonstration classes where Luciana will guide and unlock the secrets of Italian Food.
DescriptionAt the beginning of the class you will be taken to the heart of Emilia Romagna. You will learn how to make your own dough from scratch and the famous Tortelli di Zucca (fresh pasta stuffed with pumpkin). As the pasta dough rests you will be introduced to a classical Tuscan Antipasti, followed by a traditional dessert. Luciana will demonstrate how to make a traditional meat dish, and by the end of the session you will get to dine on the fruits of your labour.
WOOD-FIRE OVEN CLASSES Luciana Sampogna together with her husband Andrew Russell have developed a cooking program that will unfold the secrets of cooking in a wood-fire oven. The classes concentrate on the art of making pizza dough from scratch and also help you cook a full menu with meat and vegetables from your own home. All of this can be replicated with your conventional oven until you are ready to play with fire. Whether you are a beginner, or considering getting a wood fire oven, this class will take you to the next step in cooking with fire with confidence.
GLUTEN-FREE COOKING CLASSESAlthough classes aren’t exclusively gluten-free, participants join regular sessions and cook the same menu, using the correct gluten free flour and ingredients for your diet. In doing so you will learn the difference between dough which contains gluten and one that is gluten free. The best class to start in is the popular "Menu Classico" where four recipes are cooked, including fresh pasta made from scratch.
