DETAILSFamous for harmoniously merging Eastern and Western design influences, Hong Kong interiors master Alan Chan has created a contemporary, zen-like dining space at The Eight restaurant. Upon entry, diners are met with a water lily pond, surrounding cascading waters and light projections of moving goldfish on the floor that mirror the lifelike aquatic murals that adorn the walls. Overhead, hundreds of doughnut-shaped discs fastened together form dramatic light fixtures, dangling above intimate semi-circular dining booths.
FOOD & BEVERAGEMenus at The Eight are impressive both for their scope and for their quality of ingredients on offer, separated into specific categories spanning ‘abalone’, ‘shark’s fin’ and ‘bird’s nest’. Deluxe Cantonese meals take the form of stir-fried lobster with egg, minced pork and black beans made with live seafood, and complex dishes like steamed chicken stuffed with glutinous rice, dried shrimp, salted egg yolk, roast pork and wild mushroom. From further north, Huaiyang dishes (from the Chinese province where mega-city Shanghai is located) experiment with dishes such as stewed pork belly with marinated egg in black vinegar sauce. Expats and locals alike revel in extensive lunch menu of more than 50 types of dim sum, available from Monday to Saturday.
