FOOD & BEVERAGEHeaded up by French culinary extraordinaire Joël Robuchon, his eponymous Robuchon a Galera serves classic haute cuisine fare with a dash of Asian influence. Menus span degustation and a la carte options, including deluxe dishes such as an entrée of crispy farm egg which is deep-fried, topped with a generous dollop of black caviar and served atop perfectly positioned cubes of smoked salmon. For main course, the sautéed veal chop is drizzled with a jus of black truffle jelly, shaved black truffle and braised pak choy. The restaurant also offers wines from their impressive collection that comprises over 7,400 labels.
