FOOD & BEVERAGEWith an entirely modern approach, Aurora’s head chef Michele dell’ Aquila melds his Puglian heritage with the finest imported seasonal produce to produce contemporary Italian dishes. Fresh takes on traditional, seafood-focused dishes include the likes of pan-roasted cod fish with semi-dried cherry tomatoes and cannellini beans, and saffron risotto with spicy scallops and organic asparagus. Menus span the simple to the deluxe, offering homemade pastas and wood-fired pizza alongside eight-course menus paired with fine wines. Diners are also treated to special Italian dining events, such as sumptuous Sunday brunches with live pasta and carver stations.
The restaurant also boasts one of the largest wine collections in Macau, on display in temperature-controlled, custom-built cellars that surround the dedicated wine lounge. With over 600 wines listed, its cellars cover every major region in Italy as well as an extensive choice of French and Portuguese wines.
