FOOD & BEVERAGEUsing contemporary French cooking techniques, Michelin star chef William Drabble, whips up seasonal British ingredients into extravagant culinary delights. To start, diners may select a delicate carpaccio of hand dived scallops with blood orange vinaigrette or a boudin of wood pigeon and foie gras with caramelised turnips and Madeira. To follow, the saddle of tender Lune valley lamb with peas, lettuce and onions is a popular choice. To sample a bit of everything try the Gourmand menu, which features six exquisite dishes for the table to share, such as a fillet of red mullet, sweet red pepper, artichoke and basil oil, that can be ordered with matching wines. Menus change regularly with the seasons allowing Drabble to produce gourmet food that evolves meticulously with the passing months.

Drabble's bistro menu features classic dishes like London cured smoked salmon with lemon and dill for starters, and an assortment of pastas, sandwiches, seafood or meat for main course. Diners may select grilled sea bass with wild mushrooms and red wine sauce, or a grilled sirloin of dry-aged beef with French fries. The setting is perfect for a light lunch or pre theatre supper, and the hotels traditional English afternoon tea is also available.
