The décor at one Michelin-starred Summer Palace restaurant at Island Shangri-La hotel in Hong Kong melds eastern and western influences – crystal chandeliers and golden upholstered walls against traditional Chinese round tables – while the food is decidedly Cantonese. Diners enjoy traditional dishes such as sliced barbecued suckling pig and stewed spare ribs served in cay pots, courtesy of head chef Ip Chi Cheung
