Located in Hong Kong’s vibrant Wan Chai district, Bo Innovation is renowned for its unique mixture of traditional Chinese ingredients and molecular gastronomy. Open for lunch and dinner, the modern dining space features a bar where diners can watch chefs create meals as well as an airy, contemporary fit-out. Meanwhile, quirky head chef Alvin Leung Jr. serves up curiously named, inventive dishes such as the deconstructed “langoustine” served with English mustard, salty egg, black truffle and duck sauce.
