DETAILSThe grand dining room has an acute aesthetic of refined elegance with a rich colour palette of amber through to russet. The attractive space features a dramatic chandelier of 4,320 bronze rods suspended from the ceiling, and Australian walnut window louvers that allow sunlight to dapple into the room, illuminating the space with an ambient glow. Designed by renowned interior designer Adam Tihany, the room is replete with his custom-made tables and chairs of Macassar ebony as well as vibrant red floral arrangements in slender black vases. There is also a private wine room on site, surrounded by glass walls featuring the restaurant’s 3,000-bottle vintage wine collection.
FOOD & BEVERAGEDutch chef Richard Ekkebus has his feet firmly planted in the French tradition, delivering classic French fare that is light and beautifully presented. Ekkebus takes advantage of Hong Kong’s unique position at a global crossroads, delivering seasonal produce from the northern and southern hemispheres so diners can experience fruits from Europe and seafood from Japan. The emphasis on seafood is seen in a dish like scallop ceviche with avocado cream, kyuri cucumber and smoky bay oysters, as well as Hokkaido sea urchin in a lobster jell-o with cauliflower and crispy seaweed waffle. Other indulgent selections include duck foie gras ravioli simmered with black truffles over a creamy violet artichoke in poultry velouté and of course the Valrhona Albinao 85% chocolate soufflé for dessert. A power lunch has been created for savvy businessmen swept up by the fast pace of Hong Kong city life, whilst multi-course banquets and an ever-changing 9-course degustation menu are set to please more committed palates. The daily changing wine list features old world vintages as well as labels unique to Hong Kong like Mount Mary from Australia’s Victoria State. The selections perfectly accentuate how food and wine elevate one another when matched harmoniously.
FUNCTIONS The sumptuous private wine room is a luxurious oasis replete with wine-covered walls, rich golden organza curtains and a plush geometric carpet. Chocolate brown curvilinear chairs generously padded with delicate floral silk surround a long table covered in Frette linen for up to 20 diners. Leather clad doors can divide the space into two precincts for up to 8 and 12 guests respectively, making the room an ideal place for intimate personal and business affairs.
