Dark and retro in look and Spanish in feel, Pata Negra successfully combines the matching of Iberian influences with Middle Eastern mood. A heady mix of amber-coloured glass against charcoal-coloured walls prepares you for an intoxicating assault on the senses which leaves you wanting more. David Coomer, owner and chef of award winning restaurant Star Anise, has propelled his versatility into another part of the culinary world. Together with head chef Kurt Sampson, the menu echoes Moorish influences combined with Middle Eastern flair that stems from Kurt’s work with Greg Malouf of Momo’s fame.
Don’t be mistaken, Pata Negra is not just a tapas bar, it offers a mix of playfully rustic fare which has been painstakingly prepared. The discipline, care and passion is evident as you peruse the menu.
Authenticity is paramount at Pata Negra and this shows as you are greeted by dangling legs of the much prized Jamon Iberico and Jamon Serrano from the glass meat cabinet. Utilising a traditional 1940’s slicer, this is then lovingly executed from leg to plate. A wood-fired oven also plays a pivotal role as flavours and nuances from the sea, the earth and the land of which the menu is divided into, are further coaxed out to reveal the true earthiness of the food.
A selection of Spanish varietals, sherries and international wines, available both by the bottle and by the glass, serve to complete the journey.
This testament to taste and texture is what sets apart Pata Negra from its contemporaries in showcasing a realistic and accessible approach to Spanish cuisine while paying respect to its heritage. In other words "the moors have landed", thankfully on Perth’s dining scene.
