The menu is seasonal with favourites such as lamb shanks in winter, and in summer a modern interpretation of the traditional Moroccan dish bisteeya: a parcel of crisp thin pastry wrapped around cinnamon flavoured chicken and almonds with an orange, mint, and honey sauce. The restaurant’s pride however is the tarragon beef: prime eye-fillet served on pumpkin and potato mash with a white wine and tarragon cream sauce, available all year round. Amel and Meryem have taken traditional flavours of the Mediterranean and the sophistication of modern Morocco and combined them in a uniquely Australian setting.
