PROFILED BY DE GROOTS MEDIATouted as one of Perths finest restaurants, Jacksons is a gastronomic experience you wont forget in a hurry. From the moment you walk in, a level of calm seems to take hold as you are shown to your table. It could just be that youre no longer exposed to the bustle of Beaufort Street but Im more inclined to believe the staff have something to do with it. They seem to float effortlessly around the spacious venue and speak with soft tones that immediately help you relax. As the menu is presented, so is the excitement of selecting your meal. If you have ever wanted a bit of everything you will be pleased to know you can have it when you order The Dego ïs a sumptuous degustation meal with or without matching wines.
Neal Jacksonïs dedication to using the finest produce and combining innovative flavours and textures is immediately noticeable as you peruse the menu. Starting with Sterling Royal caviar, the menu reads like something created for the Queen herself. Seared scallops, roast pork belly and pig ear salad with cider dressing always manages to raise a few eyebrows, as does the blue cheese souffle with pear salad. If youve never been tempted to try a souffle before, this is the place to do so. Mains are equally impressive and inventive, with the likes of a roast pigeon dish or rabbit baked in prosciutto with roasted chestnuts, sprouts and fettuccine. For crustacean lovers theres a fantastic roast crayfish dish (in season), done simply with parsleyed potato, orange and pistachio butter sauce. Leaving Jacksons without trying one of Neals desserts is like going to Paris and missing the Eiffel Tower. Each sweet temptation seems to bring out the best in seasonal fruit, with the mango and passionfruit tart being a summer favourite.

DETAILSHigh amid a backdrop of Perth's cosmopolitan Highgate area, Jackson's Restaurant offers its diners the ultimate journey to experience the alchemy of the finest food and wine available. Neal Jackson's signature restaurant seeks to highlight the mastery of his culinary talents to provide his diners with a passionate rendezvous of all that is best in food. A food critic recently referred to Jackson's as a "food nirvana", a claim that does not fall short with the Savoy trained chef.
As one of the country's most critically acclaimed eateries, Jackson's has been the proud recipient of the nation's most sought after hospitality and catering awards. However, quietly spoken chef Neal Jackson prefers for his food to "speak for itself" with the reward for his success being a restaurant full to capacity. To him that is the true sign that he is "doing something right".
Recently renovated, the restaurant is a true picture of understated chic. With its chocolate walls, dazzling light feature and slick modern art, the restaurant is subtle and sophisticated, like the man himself. Crisp white linen laid tables and highly polished silverware provide an excellent canvas for Jackson to reveal his artistic flair and innovativeness. The colour presents itself upon the plate of each diner, with meals being skillfully delivered by waiting staff clad in white gloves and silver grey monogrammed uniforms. The ambience of the restaurant, not unlike the warm shadows created from the slowly flickering glow of the table lamps, seeks to provide a comfortable and inviting haven for the patron to enjoy as they await the amazing creations that arrive before them.
