PROFILED BY DE GROOTS MEDIAWith a stunning outlook across the bay through its floor to ceiling windows, Watermark offers the very best of waterside dining. Watermark is built around the picturesque views of Victoria Harbour with a flexibility which allows it to cater to leisurely drinks, dining or special occasion functions. The distinct areas each offer casual waterside ambience which has an energy that comes from the enjoyement of its guests. The natural beauty of the view seen through the glass frontage is the inspiration for the refreshing menu. Relax with a drink after work in the stylish, sun drenched Pavilion, enjoy a quiet dinner in the lounge area or utilise the Loft for a private function with a variety of catering options available. Close to Etihad stadium, Watermark is also a popular watering hole before and after sporting events.
Watermark’s menu features a diverse range of contemporary options, with a seasonally focussed menu that offers the best fresh local produce. To snack on or start with, try the fragrant chicken wings with blue cheese sauce, or duck spring rolls with shitake mushrooms and nuoc cham dipping sauce. Larger plates include classic dishes such as the Watermark beef burger or chicken parmigiana executed with Watermark's signature style. On this spring evening we enjoy the sticky pork salad with pickled bean shoots, served with chilli jam and roasted peanuts, and the Moroccan chicken salad with rocket, toasted hazelnuts, bocconcini which is drizzled in citrus vinaigrette. A couple nearby shares the vanilla panna cotta with citrus biscotti and blueberry compote, while we complete our night with the selection of fine cheeses. Watermark is designed around the enjoyment of the natural elements of soft sun and lapping water which contributes to the calming ambience. The menu and décor of Watermark are as refreshing as the soft breeze that floats by the feet of its outdoor diners.
