Pizza lovers will remember Supermaxi owner and chef Rita Macali with great fondness – her last restaurant stint was at Gertrude Street’s much beloved Ladro, before she departed the trade several years ago. Now she dons the apron and takes to the kitchen once more with husband Giovanni handling the front-of-house. An unprepossessing exterior gives way to clean, simple decor that due to terrazzo floor tiles and hard furnishings can get noisy at times. A U-shaped bar dominates a third of the space, seating those who want to perch for a drink and a snack, with tables dotting the circumference. It all adds to the busy, bustling feel of an authentic Italian pizzeria. Little touches, such as lupini given on arrival and Italian sweets at the end, smack of true Italian hospitality and make a big difference.

Pizza is certainly still part of the attraction at Supermaxi due to Macali’s superb thin bases – moist and chewy but never soggy. Try the “Badabing” with pork sausage and chilli or the “bianca Strada Nova” with gorgonzola, mozzarella, pancetta and basil. But there’s more to love than just pizza. Start with crisp-battered, deep-fried cauliflower topped with caramelised onions or pan-fried caciocavallo cheese. The pasta is house-made and may feature ravioli filled with artichokes, tossed with butter and sage or robust penne with rabbit sauce. Meaty mains include a roasted meat of the day and succulent veal costoletta. The Italian and Australian wines on offer are on the expensive side, with glasses starting at $11, but reasonably priced red and white house wine is available by the carafe. Desserts include silky chocolate pannacotta with raspberry sauce, but the one worth making room for is the crumbed, deep-fried custard. Lemony fresh, sweetened with honey and served with vanilla ice-cream, it makes a perfect finish.
