Republica’s meaning “for the people”, is Melbourne’s only bar restaurant on the sand. With The Garden (courtyard) impressively holding up to 900 people on any given day, it is a sure way to spend your summer nights with regular drink specials and a tapas and specials menu to sink your teeth into.
If outdoor doesn’t suit you, Republica has a fresh and tantalizing menu to tame your taste buds. Head chef Matthew Dawson started his training at the Commercial Club in Albury. After completing a year of his apprenticeship he moved to the Terminus Hotel, a renowned gastro-pub in the same town, where his training was fast-tracked and he became the Head Chef within two years.
The unique and versatile space of Republica is built to cater for a variety of events from weddings to parties, corporate functions and private dining experiences.
Overlooking the sand at the historic Sea Baths complex, the rooftop can be booked via Republica for those functions and events that want to be long remembered. Overlooking Port Phillip Bay, the rooftop has possibly the best view of the water in Melbourne.
