FOOD & BEVERAGEMatt started his training at the Commercial Club in Albury. After completing a year of his apprenticeship he moved to Albury's renowned gastro-pub; The Terminus Hotel where he became the Head Chef within two years. Following this, Matt developed his food and wine matching ability in the surrounding wine districts with All Saints Estate, St Leonards and Hume Weir Resort. Matt moved to Melbourne in 2004, where he did a stint at the Stokehouse St Kilda. He opened Republica (formerly Amello) with his wife, her brother and sister-in-law in late 2005. The Modern Australian menu spans from seafood and meat mains to gourmet pizzas and indulgent desserts with a strong Australian and New Zealand wine list to match.
FUNCTIONSOverlooking the sand at the historic Sea Baths complex, the unique and versatile space of Republica is built to cater for a variety of events from engagements to birthdays, corporate functions and private dining experiences. The main restaurant can seat 150 guests or hold 300 for cocktails whilst the private dining room can accommodate up to 40 guests. There is also a lounge, courtyard veranda or the hold venue can be hired exclusively for 900 guests.
