A highlight of Number 8 restaurant and wine bar is its extensive wine list of 888 wines, which has won numerous awards including two glasses in Wine Spectator Awards (USA) and three glasses in the prestigious Australian Tucker Seabrook Awards.
Chef de Cuisine - Michael Bannerman
Born and bred in Tasmania, Michael Bannerman has worked with a range of cuisines in London and Melbourne to develop the distinctive culinary style he brings to Number 8 restaurant and wine bar. Michael completed his training in Melbourne with Greg Malouf at O’Connell’s and with Michael Bacash at Toofeys. He then headed off to UK where he worked with renowned British chefs Phil Vickery and Richard Guest at the Castle Hotel in Somerset and gained experience at exclusive private clubs in London. Back in Melbourne, Michael worked as Head Chef at Bac’s, Jimmy Watson’s and at the Mecca Group’s Livebait at NewQuay, before joining Crown in May 2006. Michael says he is inspired by Number 8’s focus on serving food that complements fine wine. “The food cannot overshadow the wines,” he says. “I like to work with good produce and simple flavours, showcasing just three or four elements on the plate.”
