Personal Statement
Chef de Cuisine –
Roxana Flores:
Born and raised in El Salvador, Roxana Flores first trained and worked as a mechanical engineer.
In 1987 she moved to Australia with her husband and three children, her mother and her sister. Following her dream to work with food like her grandmother did, she began an apprenticeship at William Angliss Institute of TAFE and was soon working in catering for hospitals.
In 1997 Roxana joined Crown as a banqueting Commis Chef in the Garde Manger (cold larder) section. Roxana’s passion for fresh produce, creative dishes and dedication to ‘whatever it takes’ to please a guest, saw her move through many roles up to the position of Chef de Cuisine in one of Australia’s busiest banqueting operations. After 10 years ‘behind the scenes’ in banqueting, Roxana moved to another demanding role in 2007, as Chef de Cuisine at JJ’s Bar and Grill also responsible for Room Service at Crown Towers Hotel.
“At Crown I have had the opportunity to work with local and international guest chefs, which has been an exciting part of my culinary journey,” she says. Roxana added that she is now enjoying interacting with guests at JJ’s Bar and Grill. “I enjoy seeing their happy, satisfied faces and making their meal a most memorable one.”
