Hotel Nest is sleek, modern and very cool, with the full range of facilities to be expected from a good pub. There’s outdoor seating, a few bar areas to choose from and a restaurant that manages to be almost Zen in its peacefulness. Painted in a pale green-grey, the high ceilings and spacious setting only add to the calming effect. A raised black table topped with polished glasses features as a centrepiece and is surrounded by black bentwood chairs and tables neatly set with white cloths and napkins.
The mood within Hotel Nest encourages well-mannered merriment. The drinking options are impressive and for those who like cocktails (and who doesn’t?) there is a special menu of potent concoctions to choose from. This is seriously good stuff, along with everything else worth a tipple – the vodkas, the whiskies, the beers. The wine list is impressive, too, with a number available by the glass. Paul Raynor’s cooking is contemporary, unfussy and assured, and he has a particular skill with seafood. We loved the grilled Moreton Bay bugs with red wine butter, and the roasted squab on a bed of cauliflower fragments. The giant steak comes with stacked hand-cut chips but try to squeeze in desserts – they’re well worth the calories. On Sunday afternoons there’s a classy version of the old high tea – a formal afternoon tea with champagne. Just another reason not to leave The Nest.

The newly created Hotel Nest has undergone 15 months of planning and design to ensure that the venue perfectly matches both the sophistication and casualness that the suburb of Albert Park is both renowned and loved for.
