DETAILSBoasting a design by leading Sydney-based architect and interior designer, Blainey North, Conservatory has four distinct dining areas including a small collection of tables assembled close to the antipasto, seafood, salad and cheese selections, an intimate area near the bar and two larger dining space. The green and pearl white hues are seen throughout the space in the white marble flooring, bespoke chandeliers, woven timber ceiling, and dramatic reflective surfaces. In the open-plan kitchen custom-made spice jars hang on walls and hundreds of red mosaic tiles inspired by Victorian fenestration are used to theatrical effect.
FOOD & BEVERAGELead by Conservatory's Chef de Cuisine, Joanne Bainbridge, the restaurant's chefs work from an open kitchen that enables interaction between chefs and guests. Diners can choose from an extraordinary buffet selection featuring an abundance of seafood, dim sum, mouth-watering roast dishes and a tandoori oven for authentic flavours of Indian specialties. Also not to be missed is one of Melbourne’s most impressive dessert stations, featuring chocolate fountains with two varieties of chocolate. Conservatory's dedicated pastry chefs are on hand to prepare servings of frozen teppan ice cream, slice cakes and thread fruit skewers to order.
CONSERVATORY LOUNGEThe Conservatory Lounge overlooks the dramatic Crown Atrium and serves afternoon tea daily between 2.30pm – 5.30pm.
