Collins Kitchen is part of the makeover of the Grand Hyatt; a modern restaurant with different cooking stations, a full menu and a great neighbouring bar. The recent completion of the $45 million redevelopment includes spectacular new upper and lower lobbies, and RU-CO, the new bar.

The Grand Hyatt has completed its multi-million makeover, which has included a spanking new restaurant. What a difference! The pleasant, staid space has given way to something modern and dramatic. Collins Kitchen is actually a series of spaces, all furnished in warm dark colours. There’s a lounge area and a main dining room that is full of light from the big windows that look upon Russell Street. The restaurant sports many open kitchens which are trade specific – such as the wok and steamer, grill, seafood, and so on. Above the seafood area is a huge mirror that shows off the display while above the wok and stove areas is a giant sculptural exhaust.

The kitchen spaces determine the food choices, which means there’s something for all tastes. At breakfast, there’s everything from muesli to congree while at lunch and dinner, guest can take a tour of the gastronomic world, starting with Italian prosciutto crudo, or opting for a simple and elegant Caesar salad. The lunch set menus are good value, providing a full meal from the sushi counter, deli, grill or wood oven. Steaks and seafood steal the show, however, with a range of cuts that give diners the option of grass- or grain-fed. In between meals there’s a limited menu and a smart afternoon tea. The wine list is international with a leaning towards South Australian Shiraz and New Zealand Pinot. For pre or post meal drinks, head for the neighbouring RuCo bar which is a terrific venue featuring sculptures by Bruce Armstrong and a gorgeous selection of cocktails and cognacs.

ACCOMMODATION
547 guestrooms are furnished with Hyatt custom made beds and Egyptian cotton linen, with floor to ceiling windows, a work desk and a full marble bathroom. All guest rooms include LCD flat screen televisions and wireless internet access. Grand Club accommodation includes access to the Grand Club Lounge, with express check in/out, all day refreshments, meeting areas and wireless internet access.

High tea at Collins Kitchen on a Saturday afternoon is a delightful experience. Warm, mellow interiors, comfy seating - not too close to the others - made for a relaxed indulgent afternoon. Wait staff - sometimes attentive, sometimes much less so, offered tea, coffee and champagne, served delicious finger sandwiches, and an array of cakes. The dessert buffet was overwhelming- need several sittings to sample all the goodies on offer. My favourite was the crème brûlée.review 12/05/2011
