A stunning waterfront location and a building that makes a beautiful modern architectural statement, Peppermint Bay now has a chef and kitchen team that does both justice. Chef Paul Foreman took over in July 2009 and is well on track in bringing the restaurant’s food and service back to its hay-day best when it was one of the top food destination establishments in the state. First off at a recent lunch was a brilliantly conceived, executed and presented salad – a scattering of baby vegetables, herbs and edible flowers from the kitchen garden presented on a translucent green oil and tomato jelly and set to a melt-in-the-mouth temperature. It was a picture to look at and a simple summery joy to eat.
Presenting almost as stunning a picture was a perfectly cooked pink darn of ocean trout sitting on the blackness of squid ink risotto, topped with a dab of citrusy mascarpone with a lean-to of trout skin crackling on the side. If, as they say, you eat with your eyes, these two dishes made for a feast. A duck breast bedded on a wondrously intense and smooth parsnip puree was almost as good, while a tasting through the array of desserts was a deliciously fitting finale. The wine list is fine with a good and well-priced selection of 28 wines by the glass. You can cruise in luxury to the restaurant from Hobart and there’s a separate bar menu for more casual, alfresco occasions.
