In a very short time, this establishment went from a trendy contemporary bistro to a confusion of Asian/Western fusion. However, the collaboration works perfectly and has now settled into the soul of the city as the very best Thai eatery around. That’s not to compare it with the likes of Sailor’s Thai, Longrain or even Spice I Am in Sydney. Yet for Hobart it delivers the most authentic and flavoursome Thai experience, served with a zest above the rest.

Across the menu, the flavours are perfectly balanced and harmonious in play on the cuisine’s typical concoction of sweet/sour, salty/bitter and spicy characters. The dishes are delivered with lip-tingling freshness and zing rather than a missile chilli hit – although I’m sure the chef could ramp up the fire at your request. The spicy crunch of soft-shell crab and the laksa prawns refresh the palate while the satay gai and dense green curry entice your desire for second servings. The star of the menu is a whole and boned, deep-fried snapper in a deliciously astringent tamarind sauce. The fish is wonderfully crisp on the outside, yet still beautifully juicy on the inside. Finally, with the service comes the most authentic Thai touch – big welcoming smiles.
