One of Adelaide’s first and truly successful concept bars, the Universal was established in 1991 by Australia’s first Master of Wine, Michael Hill-Smith. His initial concept continues to this day, with great wines by the glass still available, and a wonderful mix of modern Australian fusion food on offer. It remains a special spot for wine lovers to meet and hold functions and, under the capable guidance of Vito Romano, the habit of pairing wine and fine food is flourishing.
After a few changes in the past decade, head chef Nick Gartner ensures that Universal continues to win the hearts of visiting tourists and Adelaide epicureans alike. There is a continuing selection of knock-out daily specials, a meticulous and regularly updated wine list, and the sort of neat, enthusiastic service such you can only hope to find in Adelaide. Universal is really one seamless experience. The decor is as classically elegant as always, with the front terrace still a memorable place to meet. Always restrained and functional, the Universal says to you whether you want to stop for a glass of Lanson and olives en route to a soiree, or prefer a full four courses with close friends: “we have it all”.
