A glam hotel has emerged on the former Academy Cinema site. The iconic movie theatre has been replaced with the swish Crowne Plaza Adelaide. Instead of feasting your eyes on Hollywood heartthrobs, you now do so on chef Bradd John’s food. Last year he returned to South Australia after gastronomically gallivanting around London for many years, cooking for the likes of Prince Charles and your royal corgi-ness, thank you very much. He also appeared on the UK’s version of Master Chef. Now he is playing with the brand new pots and pans of this hotel’s restaurant, Redsalt.
Bradd naturally aligns his menu with the seasons and local produce. There is a distinct European influence to his work, with current offerings being rich in autumnal flavour. Wild mushrooms are found in a tart with celeriac puree and garlic sprouts. Adelaide Hills rabbit is done three ways – in a ham flan, with capers and a raisin sauce. Suffolk lamb is presented as osso bucco with pearl barley, root vegetables and celery hearts. Sage gnocchi is perfectly flavour-matched with porchetta, braised fennel, capers, anchovies and lemon. Bradd taps into memories of cooking with his dad, in a dish of Kinkawooka mussels. Following suit with a green tomato pickle he makes for an entree of game terrine. Italian flavours resound in Piedmontese peppers with tarragon salsa and Tuscan ribbolita with cavolo nero. Ox tail ravioli is served with roast marrowbone. Phew. It is all good – everything on the plate has reason for being there. There is also a grill section, showing off the wares of Adelaide’s respected meats-person, Richard Gunner. Moo-ving onto dessert; chocolate fondant with caramel popcorn and honeycomb ice-cream tempts. Or what about roasted pear and amaretto crumble with goat’s curd…or mandarin pudding with ginger ice cream or….

Crowne Plaza Adelaide, which opened in April, is one of the only newly built, internationally branded hotels to open in South Australia in more than 20 years, and the 16th Crowne Plaza in Australia. The signature Redsalt Restaurant and Bar at Crowne Plaza Adelaide is located on the ground floor of the hotel overlooking Hindmarsh Square. Redsalt offers distinctly local flavours in its dishes but with the international flair of renowned chef Bradd Johns. Bradd has returned to his home city of Adelaide after several years in the UK and will head up the team. While Bradd has catered for the Queen and Prince Charles, appeared in UK’s Master Chef and worked in some of London’s most prestigious eateries, he sees his new role at Redsalt Restaurant and Bar as one of his greatest challenges yet. Bradd is also excited to be back home in Adelaide where he can access local wines and produce to create signature South Australian dishes. It will feature modern Australian cuisine, but will also see Bradd’s European influence as he hopes to introduce some of the style and flair found in some of Europe’s best Michelin Star kitchens.
